
Chocolate Friday
This idea came from when I was working full time and didn’t really get enough time to eat or socialise at lunchtime, a good friend and I decided that we would meet up for lunch and a chat on Fridays and we would bring in some chocolate for each other - thus chocolate Friday was born!!!!!
As you may have guessed by now I’m a big chocoholic but I do try to buy/make healthier versions of things and this is one of my favourites.
I’ve tried a lot of different diets over the years, and a Sibo diet was one of the recent ones I was advised on.
This website has some great meals and snacks that are tailored towards the Sibo diet but are also quite adaptable to other diets like gluten-free, dairy free, Vegan/vegetarian.
Chocolate Chip Cookies
These cookies taste absolutely amazing, and the best bit is they are low in refined sugar and gluten free!
They’re really easy to make. The butter is probably the least healthy ingredient, but I guess you could substitute this for a healthier option or dairy free like coconut oil. I just tend to use 90% dark chocolate as it’s a bit easier to get your hands on. Lindt do a great one which is pretty reasonable.
Chocolate Fudge Truffles
These are so easy to make and taste amazing! We used to make them all the time as kids. We would sometimes use hot chocolate powder and melted butter to make them for midnight feasts!
This is the first thing I made in hospital and this picture is the end result!
Add a touch of luxury
A few drops of lemon juice could be added
A little thick cream – less butter
Melt dark chocolate – less cocoa and butter
This recipe can be used to frost a chocolate cake
Recipe
8 oz Icing Sugar
1 oz Cocoa powder
2 oz Butter/Marge Makes approx 20 truffles
1 tbs of warm water approx
Tiny Chocolate Strands (Vermicelli)
Method
Sieve Icing Sugar and Cocoa
Melt Butter
Add Butter to Icing Sugar and Cocoa
Add warm water – just enough to make a moist mixture
Roll small amount into a ball using palms of hands
Smother ball in vermicelli and leave to harden on a plate
(this will resemble a fudge like substance)
